Cooking steps (in brief):

  1. Soak the noodles: Soak the rice noodles in hot water for 20-25 minutes. Drain the water when soft.
  2. Prepare the sauce: Mix together the tamarind paste, fish sauce, soy sauce, and brown sugar in a bowl.
  3. Start frying: Heat oil in a pan and add garlic, then add shrimp/chicken and fry for a while.
  4. Fry eggs: Move vegetables to one side, add eggs and scramble.
  5. Noodles and sauce are added to the pan and stirred well.
  6. Add bean sprouts and spring onions: Finally, fry them a little and remove.
  7. Nuts should be sprinkled on top and served with a squeeze of lemon.

Tips:

  • Vegetarian options can be made by omitting shrimp or chicken.
  • If desired, you can add a little red chili powder for color and spiciness.
  • Soy sauce should be adjusted to your taste.

Eggplant/Zucchini

(cut into very small pieces)                         1 cup

Brown sugar / palm sugar                          1 teaspoon

Kaffir lime leaves                                          2-3 (can be omitted if not available)

Red chili / green chili (optional)     1 crushed

Thai basil leaves or coriander leaves       1/4 cup (for garnish)

Oil                                                                               1 tablespoon

 

Step-by-step Cooking Instructions:

✅ Step 1: Divide the coconut milk

  • First, heat half of the coconut milk in a pan over medium heat until it oozes a little oil (3–4 minutes).

Step 2: Add the green curry paste

  • Stir well with the Thai green curry paste in the coconut milk. Cook for 2–3 minutes until fragrant.

✅ Step 3: Add the meat

  • Coat the chicken/tofu with the paste and cook for 3–4 minutes, stirring.

Step 4: Add the remaining coconut milk

  • Now add the remaining coconut milk, eggplant/zucchini and coffee lime leaves. Cover and cook for 8–10 minutes.

Step 5: Adjust the taste

  • Taste and adjust the spiciness or sweetness if desired.

Tips:

  • If you want to make it vegetarian, use tofu and more vegetables (mushrooms, bell peppers) instead of chicken.
  • Thickening the coconut milk will make the curry smoother and creamier.
  • If you can’t find Thai green curry paste, there are ways to make it at home.
